Join the author of the award-winning Apple Lover's Cookbook (and Yankee Magazine senior food editor) as you explore the wide world of antique apples. From the honeyed champagne notes of Ashmead's Kernel to the citrusy Calville Blanc d'Hiver (the classic apple for tarte tatin) to the nectar richness of Cox's Orange Pippin, apples offer a medium to explore flavor and texture in much the same way as wine, chocolate, and beer do. You’ll learn about this iconic fruit’s ancient history, taste varieties dating as far back as the 16oos, and learn how to pair the exact right apple with any recipe.
