Executive Chef Joshua Hollinger showcases a bounty of native island produce, meats and poultry from centuries-old producers, including Allen Farm, Morning Glory Farm, and Whippoorwill Farm.
His menu selections change often to best utilize seasonal ingredients and local seafood, such as Sweetneck Farm oysters from Jack Blake. He enhances this palette with sound French technique and a contemporary eye for creating clean, flavorful dishes. Water St. restaurant features a Wine Spectator award-winning wine list recognized as the most comprehensive on the Vineyard and a wide array of single malt scotches, small batch bourbons, cognacs, armagnacs and ports.
